Today we decided to make Irish food for dinner. We had chicken and dumplings, boxties (which are like Irish potato pancakes), and Irish caramel apple cake with cinnamon whipped cream (unfortunately I didn't remember to take pictures of that, but the recipe is here). And I also made a printable of the Irish blessing that I saw all over Ireland when I visited.
I love everything Irish, and having an "Irish" dinner reminds me of being here:
